Easy Kids Recipe: Chicken Scallops
Audra Lowe: Okay, parents, is your kid a fussy eater? A lot of them are. If so, then it’s time to get them in the kitchen and I know that’s probably the last place you’ve think would fix the problem. Well, Lesley’s with the best selling author who is showing us how to make mealtime a little easier with the kids.
Lesley Nagy: Thanks Audra. I'm here with Annabel Karmel who is author of You Can Cook which is a cookbook for kids and we’re going to be leaping up an easy meal that you can make with your kid. What are we making today?
Annabel Karmel: We’re making chicken scallops. It’s great! It’s a five-ingredient recipes are very simple. It’s great because the - that kids do like - chicken, of course they'll going to love doing this. So, I covered it with some pastry wrap and then I bash it till it’s thin and cut it into strips so I have whole chicken scallops.
Lesley Nagy: I love it! That’s fun ― a lot of fun for kids.
Annabel Karmel: One time we’re going to do that.
Lesley Nagy: And you're a momma for yourself?
Annabel Karmel: Yes. I got three older children and they ― none of them like thyme and ―
Lesley Nagy: But you said that all kids can cook and it’s really a good life lesson for them.
Annabel Karmel: Yup. All my kids learned to cook because on a Friday, I made them cook family supper. They can invite their friends over and they soon got to learn how to cook which is great.
So, for the coating of this, what I do is I make fresh bread crumbs. They’re much nice than the ones I buy in the store. So, just take off the crust of some white bread. They can use - if you want to okay. And then, you tear it into pieces. I'm just going to put it into - , put fresh parsley and some fresh grated parmesan cheese. And again, kids can have fun grating this.
Put on the yummy parmesan flavored crumbs. And then ―
Lesley Nagy: So this is the bread crumbs for the chicken.
Annabel Karmel: Yup. This is the bread crumbs for the chicken and then what I’ll do I is I just lightly season my chicken and then I’ll dip into some beaten egg. Again, this is the fun thing that kids do. They like it slightly messy and then you just cut in to these yummy crumbs. And, it could be rice crispies, it could be - it could be anything you want and then you just slightly sauté it in your pan over here.
And one of the great things about getting kids in the kitchen is if they have a fussy child who won't eat something because they say, “Yucky, I don’t like it.” They haven’t taken the first mouth full. Getting into the kitchen and cooking something is a good way of getting to try something new. So, vegetables for example, a good way to get kids to eat vegetables is to make vegetable chips and it’s really simple. You just cut them with a vegetable peeler and then you bake them in the oven, little bit of olive oil with salt and pepper. And it’s fun because I didn’t like pastas myself but I love these.
Lesley Nagy: Well, they look great!
Annabel Karmel: Turn into chips.
Lesley Nagy: So, kids do want chips.
Annabel Karmel: Exactly, this is a great way to make veggies and breaking up barrier. When I do the book is that every recipe has lots of different skills the kids will need and by the time they worked through the book, they will know all the skills and they can really go to any recipe and cook any recipe.
Lesley Nagy: And they can grow into adults who can cook.
Annabel Karmel: Which is great because not all have a much more healthy diet and like going to the local fast food outlets if they can cook something like this which is so simple and cheaper than buying it.
Lesley Nagy: That’s fabulous and I've had such a fun time here.
Annabel Karmel: You must have been a fun mom to cook with.
