Nina Simonds: Hi out there this is Nina Simonds, with Spices of Life, and today we are with Gail Willett, who is a brilliant cook you not only have been cooking for many years, your grand mother and mother and you also attended the school in New York. Gail Willett: In New York the Institute for Integrative Nutrition. Nina Simonds: And so we thought we do this is veggies 101 hundred appreciated festival. Gail Willett: That’s right Nina Simonds: And today. Gail Willett: We have Broccoli Rabe with minced garlic and roasted with peppers, first thing we do is just get rid of the tough ends and then chop it in small bits, so that it look like this and some people don’t like the bitter taste Nina, so I’ve put in boiling water for about 1 minutes it takes away the bitterness and then I am going to the stove now. Nina Simonds: And then how high is your heat. Gail Willett: My heat is medium heat, I have garlic I am going to stirfy this sauté for about a minute. Nina Simonds: A minute. Gail Willett: Okay, yes Nina Simonds: Okay Gail Willett: Just it wanted to burn; next I am adding the Broccoli Rabe. Nina Simonds: Oh, that looks so good. Gail Willett: I sauté this 3 or 4 minutes then I add the roasted red pepper. Nina Simonds: Oh, Yeah Gail Willett: And I have to say Nina that I did not roast this myself, but I bought the roasted red pepper. Nina Simonds: You just drain them and cut them up. Gail Willett: That’s right Nina Simonds: And look it how beautiful it is. Gail Willett: Is it not gorgeous, its really, really nice, and then a salt to taste I cook until its tender sauté. That would take I would say about anther 5 minutes. Nina Simonds: Now it’s 5 minutes later Gail Willett: Its 5 minutes later you’ve got this beautiful looking. Nina Simonds: Isn’t that gorgeous. Gail Willett: Broccoli Rabe with those red peppers. Nina Simonds: So there you have it, beautiful Broccoli Rabe with roasted red peppers Gail you are brilliant. Gail Willett: Oh thanks very much.
