Ginger bread in the holidays go hand in hand just as much as the holidays and cocktails. Food Network host Alex Bornateli’s ginger bread cookie recipe is so delicious. There is cinnamon, there is nutmeg. I was inspired to come up with a cocktail that captured all those most delicious flavors. I call it the gingersnap. I'm going to start off by rimming the glass. I'm going to take some of this ginger beer that I'm going to finish my cocktail with. Pour out a little bit and dip the rim of my glass into the ginger beer. Then I'm going to put some of these delicious ginger bread snap cookies all around the outside rim. Now I'm using gingersnap cookies that I've pulverized in a food processor. But if you don’t have gingersnap cookies, a little bit of cinnamon sugar or brown sugar would work great for this cocktail. Now to get started on the cocktail, I'm going to fill my shaker with some ice. Then now for the good stuff, 1 ½ ounces of dark rum. The dark rum is what’s going to give that wonderful molasses flavor to the cocktail which is so present in Alex’s cookie. Then, I'm going to add a teaspoon of fresh ginger juice that I found at the supermarket. But if you can't find it, it's really easy to make yourself. Just get yourself a piece of ginger, peel it, chop it up a little bit, put in the blender with some water and then strain it. Voila! Fresh ginger juice. Then, I'm going to add a teaspoon of cinnamon schnapps. That's what going to give this cocktail the same wonderful flavors as Alex has in his gingersnap cookie. And a pinch of clove, then I'm going to add in an egg white. The egg white is important in this cocktail because it's what makes it frothy and foamy. Now if you don’t want to add the egg white, just know you're not going to have the same outcome. It's not going to be frothy and foamy like I like it. When you put the egg white in, you really want to give it a shake at least for 20 seconds. Realize that the longer you shake, the frothier and foamier this cocktail would be. All right, now for the finishing touch, two ounces of ginger beer. Ginger beer is very much like ginger ale but with an extra added pow. Okay, I'm just going to stir in two ounces, stir that around. Put my shaker back on, strain it out into my cocktail glass. Here we go. All right, I'm going to finish it off with a cinnamon stick and a piece of crystallized ginger. Give it a try. That is a gingersnap in a glass. Delicious!
