Healthy Indian Butter Recipe
Audra Lowe: I think that we've all come to learn that there's a lot of diets out there that just don't work. It's really all about changing your lifestyle. So Lesley is in the kitchen with one Australian author who transformed her body from 220 pounds and she did it all with a healthy lifestyle, today she's sharing her secrets in new cookbook and also in the tasty recipe, take a look.
Lesley Nagy: Thank you, Audra. I'm in the kitchen day with Annette Sym. And your story is so inspirational. At one point, you weighed 220 pounds?
Annette Sym: Yes. It was a lot in the middle of it those days.
Lesley Nagy: You don't even look the same as in that photo.
Annette Sym: Well, you know, I told myself how to be healthy and instead of dieting, you know, I used to ate the wrong food and what I did is -- I had to Google this fabulous food -- burgers, fries, cheesecakes and lots of stuff. And so, I was able to tell myself to slim kind of.
Lesley Nagy: And you're not a nutritionists and you're not even a chef, but --
Annette Sym: Yeah.
Lesley Nagy: You managed to sell over three million cookbooks in Australia, how did you do that?
Annette Sym: Well, because everyone loves to eat really good food. And I give it to them without the guilt. The dish I'm making to eat a day is like probably at 40 grams of fat at least, and my vision is 4.4, so this is good food.
Lesley Nagy: Oh, that sounds perfect, I love the low fat and you know, everyone needs to be healthy.
Annette Sym: Yeah, and great for people with diabetes as well.
Lesley Nagy: And let’s get started and what is it called, Indian Butter Chicken? Because that doesn't sound very low fat to me, you know.
Annette Sym: No, in Indian Food, I kind of say, this dish is basically would be like how to attack on it and apply, because normally you'd have so many bad things and have lots of fats and lots of cream, lots of butter --
Lesley Nagy: And what are we adding here.
Annette Sym: So, what I’m putting in now is a little bit of garlic, crushed garlic and some crushed ginger. And you’re just going to cook that together with the chicken -- I kind of cook the chicken a bit ahead because I wanted to be a bit ‘quickie’ for you. So the flavor then get into the chicken which is really good. And then, we’re going to put in a cup of chopped onion.
Lesley Nagy: Oh now, its starting to smell good.
Annette Sym: Yes. And what I love about my recipe is not only of a guilt-free, as I said, but they’re really quick because we’re going to take -- yes.
Lesley Nagy: That no one has done, I agree.
Annette Sym: Checking the pan, let’s get on the table so we can watch our favorite TV show. So, I'm going to put in some cilantro.
Lesley Nagy: You have a lot of spices there.
Annette Sym: And with Indian, you’ve got to have lots. Put some paprika in.
Lesley Nagy: So, its very flavorful?
Annette Sym: Tumeric, some cumin, some coriander, and I’ve got a little bit of light salt -- stock built in a bullion, you know, the chicken.
Lesley Nagy: And it’s good because it’s a low salt version?
Annette Sym: A little bit chili, I've got a little -- get a little kick into it.
Lesley Nagy: And the colors are getting so rich and beautiful.
Annette Sym: Yeah, and we’re going to put in some no added salt tomato paste and then all we’ve got to do now is just put in the low fat 2% evaporated milk and now you can see that this is going to make it really rich. And serve it with some Basmati Rice because that’s like a lower glycemic index rice --- 4.4 grams of that, I mean hello.
Lesley Nagy: I didn’t get a sweat up here. That’s a perfect recipe. And of course your book also has a weight loss plan.
Annette Sym: Yes, it does, I gave you a 28 days to change a lot. And it’s about having really good, knowing how much to have -- a think a little bit to that portion control, like you know, you can still have food, but, you know that you think you can have as long as you don’t need a lot of it.
Lesley Nagy: An Indian Butter Chicken that has helped you to keep up 70 pounds for the last 18 years, oh I can’t wait to try it.
Annette Sym: I know, let’s go for it. I mean this is about real food that helps you get skinny.
