How to Make Chicken Marsala

When preparing the pasta for the chicken marsala, you want to fill your pot up about 2/3 of water. Add
about a quarter cup of chicken stock and a little bit of salt. We’re going to have to clean and cut our
chicken. You want the pieces to have a little bit of meat to them because if they’re too thin, it will cook
too quickly. You want it to have some thickness so that way, they’ll be juicy and they won't be
overcooked. What you want to do is you want to roll your chicken in flour. Kind of roll it around in the
flour then just set it off to the side. Our water is boiling now so we’re going to add about a tablespoon
of olive oil. We’re going to put in and cook about a pound of pasta. What you want to do is you want to
take it and then stir it around in there until it’s soft enough and you can just bend it and put it all in
there. You can repeat this a couple of times to get the whole pound in.
We’re going to chop up an onion now. We’re going to take our fresh basil now, we’re going to chop that
up into fine pieces. We’ve put butter into our saucepan, turned it on to a low heat and melted it. Now
we’re going to add our onions and basil. We’re going to put it back into the pot. Put it back over here
and put it on the stove after the stove’s been turned off. You don’t need to cook it any longer like that.
You want to add about a tablespoon of butter to our cooked pasta. Adding the butter gives the noodles
its own flavor. It also keeps them from sticking together. With our onions and basil sautéing, we want
to add garlic powder, oregano leaves and black pepper. As you can see our onions are starting to brown
so that means it’s time to add our chicken. We just take them and we’re going to start tossing them in
with the onions and basil.
When you’re cooking this, see you one side starting to get cooked, you just want to flip it over. Very
similar to cooking on the grill. When you see that all the liquids evaporated, you want to add the
mushrooms. This is going to give a little bit of moisture to it. Stir it up a little bit then you want to cover
and let it cook. After we’ve let it cook for a few minutes, we’re ready to add our next ingredients. You
want to add about a spoonful of sugar, a tablespoon of chicken stock, a cup of marsala cooking wine.
Now that we’ve added all our ingredients, we’re going to let it cook uncovered on a high heat until half
of the liquid is gone. That’s when you know it’s ready to serve. Magnifico.
