So what I'm going to do now is tell you all our ingredients. We need two tablespoons of washed
and drained rice, one cup of sliced carrots, total third of a cup of oil. What I like to do is I like to
mix the extra virgin olive oil along with the corn oil, this way you get the authenticity of the
olive oil and you get the lightness of the corn oil. We're also going to need a tablespoon of sugar,
because with every zeytin yellow or olive oil dish, you need sugar. I like to add a teaspoon of
tomato paste for color, half of a lemon juice, salt and pepper to taste, and of course one bunch of
leeks.
So I'm going to do is turn on our skillet. Now this I'm going to turn on at low. Because I don’t
want to get too hot too fast, because I got to cut our leeks and I'm going to explain how I going to
do that. So just put this on very low and we’ll put in our oils. Now you could see the colors of the
olive oil, how deep and how rich it is. Just want to mix it up. Don’t be afraid to use the oils,
because this is an olive oil dish. So oil is the name of the game.
Now with our leeks. Leeks are like really big scallions. They come thick, they come in a bunch
of four. And of course, the thinner the leek you find, the more subtle and sweet the flavor. But
sometimes, you can’t always find that, so you just have to improvise.
So what I do is I wash them. I cut off the ends, which I’ll cut the ends off right here. And what
we have to do after we wash them is we take off the first coating, which I did that already here.
But there still a lot more washing to do with the leeks. But what I like to do first is chop them
about an inch and a half thick. And as you could see, I cut two already here. so they're a little
tough, but that’s just the essence of the leeks.
And then what I do is as you could see, I already cut two over here. I put them in a bowl of
water, because there's a lot of sand and grout. These comes from the ground, they're part of the
onion family and there's a lot of dirt in there. So washing it just once under the sink is not going
to cut it. You really have to get in there and rinse this water out a few times.
So now our leeks are washed. We can raise this temperature, bring it to a high. And we're going
to start off by putting in our leeks, our carrots, and then our rice. Now if you have cooked rice at
home. Like leftover from the night before, you can use that too, because rice does take a long
time to cook. But if you don’t, that’s okay, because we add a couple of boiling water to this
anyway. Because the boiling water is what's going to cook the rice and you don’t have to put too
much rice in, because it’s going to expand when they cook. So it’s going to multiply.
So we’ll just wait and see, I think we could put in our leeks. We can add all the ingredients at the
same time. That’s why this is so easy. And it’s so healthy. Forget about that it has vitamin C, and
folic acid, and all that great stuff. But it has natural diuretic properties. Natural laxative, and it’s
great for losing weight. So all you women out there, this is a great thing.
So what we're going to do now is just add a little bit of tomato paste. I like to add the tomato
paste only for the color. We’ll do a little bit of sugar, because with every olive oil dish, you need
some sugar. And now is a great time to add our boiling water. So we’ll do one cup of water. You
really want to bring that to a nice boil. And this is going to cook for about half an hour to 40
minutes. So it’s not anywhere near done. It’s easy, it just takes a little bit to cook. But that’s
okay. Just adding our salt and pepper and a little bit of lemon juice.
So once that comes to a boil, we're going to cover, lower and let it simmer.
