Pistachio Linzertorte You know it’s not Christmas without Cookies’ Visit. I’m going to be sharing a recipe with you right now for a Pistachio Linzertorte with cherry jam. I’ve got 1/2 sticks of salt and butter that I’m going to cream with one cup of confectioner sugar. Now, in this dish, I have three egg yolks so I’m just going to pour in the yolks and beat that up. Now, with our dry ingredient, I'm going to put in one and a fourth cup of all-purpose flour, a cup and a fourth. I'm going to put in one and half cups of ground and salted pistachio nuts and I love pistachio nuts. I'm going to add a fourth of a teaspoon of cardamom and a quarter of a teaspoon of nutmeg. Give this a quick stir, just to mix our ingredients together. Okay, so we’re going to add our dry ingredient to our wet. Now, I’m going to chill our dough for about an hour. Here, I’ve got some that’s been chilled in for us. Now, I’m just going to put a little flour out and roll our cookie dough into about a quarter of an inch thickness. You want to make sure that you flour your rolling pin good so it won’t stick. Now, for my cookie, I'm going to use a star-shaped cookie cutter, I’m just going to put a little flour out there to dip my star into it, there we go. I'm just going to ease these up and onto our cookie sheet. Now, we’re going to compact and we’re going to take a smaller version of the star go into the center of our cookie and cut out a star. So onto the pan these go. So our cookies into the over yawl for 12 to 14 minutes on 325 degrees. So we’re going to put these back on our cookie sheet because we’re going to re-bake these for about two more minutes. All I’m going to do is take a cherry jam and put a light coating on each cookie. Now, I'm going to take one of our cookies that has a little star removed from it and I'm just going to lay it on top and these are so festive looking. Back in the over for two minutes and this is what our finished product looks like. Look how pretty these are. The extra two minutes just allowed our jam to kind of glaze over.
