First let me show you a quick and easy way to test for doneness on both steak and chicken using your hand. Simply relax your hand and feel the fleshy part right here above your thumb, that is what rare steak or chicken would feel like. Now, hold your thumb to your middle finger, push, that’s what medium meat feels like. And by holding your thumb to your pinkie, that is what well done meat feels like. It's a good way to compare when you're cooking meat to know what doneness is at. I highly recommend using a wooden cutting board as oppose to a plastic one. Wood contains a natural enzyme that aids in the fighting bacteria that can be caused from raw meats and other cooking ingredients. To make your cutting board more safe when you're cutting on it, simply place a damped towel underneath and that will keep it from sliding on any slick surfaces. For safety when you're frying in hot oil, simply add a little bit of salt to your pan before your other ingredients that will reduce your oil splatter when you add those ingredients into your hot oil. I think all of those will help keep you a little safer in your kitchen.
