Spiced Apples and Raisins Great choice you are going to love it. We’re making a really delicious fruit side dish of apples that are cooked down with raisins brown sugar and fresh thyme. And it taste great with everything from turkey to pork you name it you're absolutely going love it. So we start off here with the big pot we’re just going to turn on, just to let it warm up a little bit, right. And to this we’re going to add probably two tablespoons of butter right at the very bottom and just let it start to warm up. What we’re going to do is actually brown the butter, to give it a nice little nutty flavor, right. And while that is starting to brown, we’re going to crank it out high. Alright, we got couple of apples here, right. We got some granny smith apples. Now for this I like granny smith, I also like gold and delicious because they're tart and they're sweet, they really hold up to the cooking process. And these are great apples to cook with. Alright, we’re start up with the apples that already been pealed or it is like cut the cheeks off. Alright, just like this we’ve cut it off in three big pieces right. Save you a lot of time from coring. Right we’ll take this and got it toss right in the garbage. This is so delicious sides dish guys. It goes well with so many different, great delicious meats to start here and you’ll love it. Alright, so we’ve got the butter it's all melted right down at the bottom. And all we got to do is take the apples where the right on top, we’ll almost want to let them caramelized a little bit right. Get them right in. they smell great already and I’ll tell you sear apple to a little bit of warm butter it sought to delicious aroma. Alright that is great. Now to this we had raises and let this start to warm up already as well. Alright, then we’re going to add some fresh thyme to this. Now fresh thyme is a really interesting herb flavor with this because fresh thyme actually tastes great with sweet flavors. So we’re going to take of sprigs of fresh thyme and we’re just strip off the leaves and spill the tiny little fresh thyme leaves right on top of the apples. The fresh thyme is also going to officially make it a savory side dish that tastes really great. In a lot of great meat dishes and I put the fresh thyme right in just like that. Now what we’re going to do is actually add some font out apple juice concentrate, which really has a deep apple flavor kind of hits some of this great flavors on. Put the apple just right on top and just like that. Also got a little bit of brown sugar, brown sugar and the apple juice when they're cooked together they make a really delicious sauce and it just going to wrap around the apples. Alright, brown sugars should go in. And then we’ve got some great holiday spices. Who really is going to add some depth to the apples as well? We’ll start off a little bit of cinnamon, I've got some clove, and I got some cardamom which is really delicious. And also a little bit of power mustard. Alright, we’ll start off with the cinnamon, just dash of cinnamon right on top and just about, about teaspoon and a half. We do the same thing with the clove. By a clove can a little strong, alright so add as little bit of ground clove, you'll also going to add the cardamom which is a really interesting flavor. I love ground cardamom and sort of a great holiday twist in it. And then also a little bit of mustard power. With the mustard powder is your going to add a nice little zing to it. A little sort of mustard spice right at the very end of the flavor, where in the back of your tongue it's going to taste great, and now also we’re going to season up a little bit kosher salt. Add some fresh cracked pepper. Alright, so it’s nice and savory and then we’re going to take a spoon and we’ll share the whole thing together and just let it simmer. Now this is going to cook for probably you know 10 to 15 minutes, until all of the apple juice cooks down and it has become very concentrated and even caramelized. Alright, with the brown sugar and the apple juice is going to stir together and make a really luscious sauce. And all those great spice you can cook it down and it’s going to be really delicious. Alright now to this one last thing, I'm going to take a lemon alright and stick half of the lemon, squeeze it through it my fingers right. And just squeeze the fresh lemon juice over at the top of the apples. And it’s going to be fresh bright and really delicious. Alright, so as it cooks down take a look at it, well it’s going to look like after about 15 minutes. Alright, the apple is going to be really luscious and delicious. It’s nice and thinks it smells great. And what we’re going to do just to present it and also the story at the same time. I've got a nice little jar with a lash lid. Alright and what we’re going to do is take a spoon and just take the apples. And just going to spoon them right in. Now if you love cranberry sauce, I love cranberry sauce too but this is a great alternative or even does something one up from that. You can actually serve both which would be really great. So take all of these apples and we’re just going to put right into a jar. Alright, and you can serve this at room temperature. You can serve them warm. You can even serve them cold and they're absolutely delicious. Look at that isn’t that cool? How great would that look on your table for holiday season? You’ve got apples that are cooked down with raisins, brown sugar and fresh thyme. Which is so interesting and really delicious?
