Speaker: Why should I eat fruits and vegetables? Jeannette Bessinger: Well vegetables and fruit can avoid heart disease and stroke. They can help you lower your cholesterol, they can help you lower your blood pressure, and they can even help you fight of certain forms of cancer. Typically in this country we average about three servings of vegetables a day. If you don't count potatoes which are more like a starch than a vegetable, and it's just -- it's not enough. We need between five and fourteen servings a day. The average American depending on your size and your activity levels, but servings about a have to come. For a person who is eating an average 2000 calory diet, each day they would need about 9 servings of vegetables, which translates about 4.5 cups per day.
